currently meal prepping

i usually do a little meal prep on Sundays, but I may do a bit here and there throughout the week. at a minimum, I try to always do this - makes the whole week SO much smoother!

below is the list of what I hope to meal prep this week - it may not all happen, and that's okay! even 5 minutes of prep is super beneficial.

  • prep some dinner components:

  • prep some sort of dessert for the week

  • prep some things to make breakfasts/snacks/lunches smoother

    • pull pancakes out of the freezer

    • pull my chicken noodle soup out of the freezer for my lunches this week

      • here’s my full list of favorite breakfasts and lunches!

      • here’s how I freeze/thaw soup

    • make egg muffins with bacon and cheese

    • make a batch of oatmeal like this

      • excerpt from my “my breakfast and lunch favorites” blogpost:

      • up until, like, a year ago, i swore I disliked oatmeal. but it turns out I was just eating the wrong kind. my mom one day made oatmeal like this with good oats, and served it to me plain with a generous slab of butter stirred in. it was this savory risotto-like situation. it was heavenly. and from then on, I was a converted oatmeal lover.

      • so now I make a batch - at least once or twice a month - of the above recipe, and I portion them out into smaller mason jars like this. that way, when it’s breakfast/lunch time, I can grab one of the containers, heat it up, stir a slab of butter into the hot oatmeal, and enjoy. i thank Past Haley profusely whenever I find these gemstones in my fridge.

  • our pillows, always and forever. one of our favorite investments we ever made. last week we gave them a good wash - per our September cleaning schedule - and MAN ALIVE it has been the ultimate guilty pleasure.

  • brett’s birthday - weeee! we have a set list of traditions we like to do for my birthday, and we’re having the best time brainstorming and dreaming what he’d like to do for his.

  • planning what I’d like to put in our Christmas Eve Box this year - aka our gift tradition for Brett and me. the box has three categories: something(s) to increase the comfy + cozy factor of our home, something(s) to strengthen our marriage + cultivate intimacy, and something(s) to do together in the coming year. read more about this beloved tradition - and what we’ve put in the “box” in years past! - here.

sunday:

breakfast:

dinner: grill and chill

  • no grill and chill - going to see our friend’s band play at outdoors at a brewery!

  • whenever I don’t feel like doing a routine - for whatever reason - I skip it, guilt free. when I skip routine, I realize how much I miss (and benefit from!) that routine. and I return to the routine with newfound appreciation and enthusiasm.

  • so, grill and chill is skipped this week so that we can instead go on an adventure. and that’s okay!

monday: sandwich night (+ soup/salad, if we're feeling it)

why we love a weekly sandwich night

tuesday: taco-ish tuesday

wednesday: pizza, pasta, or rice

thursday: chicken, fish, or sausage

  • chili (from freezer)

    • learn how I freeze - and thaw! - soup here

  • prep some dinner components:

  • prep some sort of dessert for the week

  • prep some things to make breakfasts/snacks/lunches smoother

    • make some turkey wraps with honey mustard for easy lunches (omit lettuce so wraps last longer)

    • make mason jar salads for a few of my lunches

    • make healthy breakfast bars with jam with gooood peach preserves

    • cut apples for KK and me for the week

    • transfer some frozen fruit to thaw in the fridge for KK (she loves cherries and mango this way)

    • life changing soft scrambled eggs

      • yes, I’ve been known to make these ahead of time for the week. Project Meal Prep taught me how: “For [make-ahead scrambled eggs], it’s best to just slightly undercook your eggs. Maybe 30 seconds away from when you would actually want to eat them. You’re going to have to reheat everything and you don’t want hard overcooked eggs! They’ll cook a little more in the microwave during reheating.”

my sister knows how much I love a good longline bra and how much I hate underwire (I will not wear it). she swore by this brand* and I skeptically ordered a few of their bras to try. HOLY MOLY THEY ARE MY NEW FAVORITES. I am never wearing anything else.

so basically nowadays I’m wearing my beloved shorts and these bras*. 99.9% of the time. what a time to be alive.

*although I authentically love these bras and paid for them with my own money, know that if you use my link I earn free leggings. YAYYYY!

currently streamlining

  • our medicine + first aid area. in September and March, I take inventory to see what’s expired, low, or empty. here’s my annual list that I swear is the reason I sleep so deeply - on this list I dump any household task, adulting thing, or family tradition that I like to do (or should do) in certain months.

currently loving

  • that my lashes are back, thanks to my lash serum!!!

    • as a result of our pregnancy loss, all my mature eyelashes fell out. I was devastated - not only because it felt like yet another insult added to an already-traumatic injury, but losing my eyelashes - something I love so much about myself - felt unnecessarily cruel. (not to mention I looked like a naked mole rat. which is a separate devastation in itself.) I’M SO HAPPY THEY’RE BACK.

  • our new doormat. because wow, there will never be a doormat more fitting for us.

currently working on

  • behind-the-scenes prep work here and there for my fall weddings.

  • our September cleaning schedule - each area of our home is assigned two months a year to get a goooood scrub, and September is the month we give the bedrooms some much-needed TLC.

  • remembering what works for other people may not work for us, and that’s okay.

sunday:

breakfast: my favorite breakfast casserole

  • excerpt from my new “my breakfast and lunch favorites” blogpost:

  • I have a bigggg weakness for McDonald’s Sausage Egg and Cheese Biscuits after a good, hard swim. this casserole tastes pretty similar, so of course I’m a fan.

  • also, also. this casserole freezes well. what I do is after baking this casserole, I let it cool and cut it into granola-bar size strips. and I freeze the casserole in these strips so that when I need a quick breakfast for the week, I take a few of these casserole “bars” out of the freezer. I did this all the time as a teacher.

dinner: grill and chill

  • brett grills burgers YAY!

monday: sandwich night (+ soup/salad, if we're feeling it)
