Consider this a casual note more so than a formal recipe. (Here’s the recipe from which this dinner is based, if you prefer a more traditional format.)

  • green beans, trimmed and cut into bite-size pieces - but feel free to try other veggies!

  • olive oil

  • garlic salt

  • fully cooked chicken sausage, sliced

  • Trader Joe’s frozen sweet potato gnocchi*

  • Trader Joe’s balsamic glaze*

    • *if you don’t have these, feel free to sub for whatever!

  • goooood shredded Parmesan cheese (not the powdered stuff in a green can, FOR THE LOVE)

You’ll notice I have no quantities listed above - adapt this to meet your personal needs and preferences.

Heat oven to 425 degrees.

I take my sheet pan and cover it with my baking mat. I throw the green beans onto the baking sheet, add some olive oil, and toss until lightlyyyyy coated. I like to season my green beans with garlic salt, but you do you.

Roast green beans in the upper third of the preheated oven for 15-20ish minutes. They’ll get a little more deliciously roasted as we cook everything else - I just like to give my green beans a head start since we like ours pretty charred, so feel free to tweak this if you feel differently.

Speaking of: have you had goood roasted green beans? Life changing. I can eat a whole pan. I no longer waste my time with crisp-tender green beans. Blechhh.

(That said, if you prefer crisp-tender green beans, this “recipe” is not for you.)

Remove sheet pan of green beans from the oven, and, in an even layer, add both the chicken sausage and the Trader Joe’s frozen sweet potato gnocchi on top of the layer of green beans. Make sure to also add all that frozen sage-butter seasoning from the Trader Joe’s frozen sweet potato gnocchi bag. Delish.

Stick back in the oven and cook for another 14-17 minutes, depending on your preferences and your oven.

Also. This Instagram post mentions the two things I always have in my freezer for easy, delicious weeknight dinners. Life-changing. I hate to use that term twice in the same post, but here we are.

Take sheet pan out of the oven one last time and generously drizzle with the Trader Joe’s balsamic glaze. Sprinkle some gooooood parmesan on top, too. Pop in the oven for 2-3 minutes. This step is probably optional, but I like that it makes the glaze a bit more syrupy and the cheese a little melty.

We love serving this meal with our favorite cornbread and a big bowl of fruit. But you do whatever speaks to your heart - everything about this meal is customizable!
