prep salad stuff, make croutons
I put my salad in this big container with this thin dish rag, I put my salad veggies in these containers, and I put my croutons in a big ol mason jar
rinse + destem grapes for the week
these are my favorite produce containers bc of how they stack
slice lemons for lemon water, store in mason jar for the week
make big batch of chicken meatballs
brett’s parents visit for the day:
pull chili from freezer
fritos, cheese, green onions, avocado, sour cream
heat veggie rice soup in the fridge
make cornbread, brett cut up sourdough
serve big bowl of oranges, berries
monday:
grilled chicken sliders or grilled chicken wraps
an array of sauces: chicken sauce, caesar, ranch, buffalo, mayo, etc
lettuce, avocado, tomato, onion, croutons, cheese
tortillas or rolls
roasted green beans + tomatoes + roasted sweet potato
big bowl of fruit
leftover soup
tuesday:
burrito bowls
leftover grilled chicken
pinto beans + “ refried” black beans
i usually do 2 c beans + 7 cup water + 2 TB bouillon + 1 tsp salt + 1 tsp onion powder + .5 tsp garlic powder in an Instant Pot for 30ish minutes (or a Slow Cooker for 8ish hours) - or I sub Pinto Bean Seasoning for the spices
I may remove some liquid and blend the cooked beans (using an immersion blender) with a little butter to make a “refried” situation
if I make it fresh, I always freeze half - so some weeks I’m just reheating frozen beans. but i’ve learned we love to have both pinto beans and “refried” black beans on hand each week
i love to freeze in these deli containers
weekly batch of queso
i use yellow or white american, i use tillamook mexican cheese, i double the jalapeno, and I omit the cilantro

wednesday:

thursday:
leftover grilled chicken + rice + one of these sauces
roasted broccoli + roasted green beans
I swear by Trader Joe’s Onion Salt as my seasoning
big bowl of fruit + leftover bread
friday:
build your own pizza
tortillas, naan, or homemade pizza dough
marinara sauce, pesto
pepperoni, leftover grilled chicken
cheese
roasted broccoli, roasted brussels sprouts
big ol salad, big ol bowl of fruit
saturday:
family movie night + snack dinner saturday
movie night must-haves - a play tent and a big ol crash pad
snack dinner, with the kids’ snack dinner in muffin pans
