dinner: grill and chill
post new years tradition - no grill and chill today! - take the leftover dippers from our New Year’s Eve Fondue tradition, and make a build-your-own risotto bowl situation
aka take a plain risotto recipe, and set out the leftover grilled steak, grilled chicken, grilled shrimp, grilled chicken sausage, roasted veggies, etc for a Build Your Own Risotto Bowl dinner. aka THE BESTTTTT.
when I need a plain risotto recipe, i usually use this recipe, use stock/broth instead of wine for personal preference, and omit the mushrooms
big bowl of fruit and/or easy green salad
monday: sandwich night (+ soup/salad, if we're feeling it)
why we love a weekly sandwich night
build your own sub sandwich bar with jimmy john’s bread + chips + fruit
I’ll get stuff for Brett to build his beloved Italian sub or California club or Chicken Buffalo Ranch sandwich (I peek at sandwich shop menus to see what ingredients I need to buy), and I’ll stick to my favorite turkey sub. best dinner ever + best leftovers-for-lunch everrrr!
tuesday: taco-ish tuesday
mashed avocado
queso (we always get the Queso Mama queso at Costco, but I love this or this recipe)
big bowl of fruit
wednesday: pizza, pasta, or rice
chickpea pasta + our favorite garlic alfredo sauce
blistered garlic green beans or leftover salad + air fryer brussels sprouts
leftover bread + leftover fruit
thursday: chicken, fish, or sausage
leftover veggies or leftover salad or roasted potatoes
whatever fruit’s lurking on the counter or in the fridge
friday: takeout or leftovers
saturday: snack dinner saturday or dinner with loved ones
dinner with friends YAY!

currently meal prepping
i usually do a little meal prep on Sundays as a part of our Grill and Chill, but I may instead do a bit here and there throughout the week. (you’ll notice I allow space in my daily rhythm for potential meal prep.) at a minimum, I try to always do this - makes the whole week SO much smoother!
below is the list of what I hope to meal prep this week - it may not all happen, and that's okay! even 5 minutes of prep is super beneficial.

one of my favorite podcasters said this is an incredibly easy way to plan joy into your week and I SO agree. see here why it’s our new favorite thing for our marriage.
buttermilk skillet cake with walnut praline topping or risotto rice pudding with brown sugar and vanilla
prep some things to make breakfasts/snacks/lunches smoother - at a bare minimum, I try to always prep some sort of eggs, some sort of oats, and some sort of muffins/waffles/pancakes for our breakfast rotation, and I try to change up the recipes each week so that cooking stays fun for me and so KK is exposed to variety:
prep strawberry cocoa chia pudding from this cookbook
make several egg and cheese breakfast quesadillas
or pull easy egg muffins from freezer
make a batch of banana quinoa rice pudding
move some frozen mango/pineapple/cherries to mason jars in the fridge for KK
slice lemons for hot lemon water
make cinnamon muffins and/or no bake oatmeal energy balls, if time/energy (freeze leftovers)
make a big batch of carrot orange juice, if time/energy

make smoothie packs of vanilla cinnamon date shake and pregnancy smoothie*, if time/energy
aka I portion the frozen produce into these containers so that all I have to do in the morning is dump the contents into my blender and add liquid
