Tuesdays are my day I meal prep all this. so Tuesday Dinner is something with all that, and something with beans.
Quesadilla Night or Pinto Bean Bowls or Build Your Own Tostadas, or Burrito Bowls again. We can’t get enough lately.

because it took me awhile to realize Leftover Night can be any night of the week. And because I have a standing weekly playdate with my BFFs Wednesdays after nap, cooking dinner wasn’t working. Wednesday Leftover Night it is!
butttt I do make a pasta earlier in the day on Wednesday as part of my weekly meal prep, so a big bowl of leftover pasta is usually our go-to
meal prep:
brett roasts a chicken like this
make a batch of mini muffins (and/or other baked good) for the week
pull banana muffins from freezer
make some sort of pasta (or soup)
that Costco tortellini in my freezer + that Trader Joe’s bruschetta sauce in my freezer
prep a salad using our goooood salad stuff for the week
prep garlic bread and my favorite canned green beans, too
thursday:

something with fish
leave some mango, avo separate for kids
big bowl of fruit + leftover bread
salad using our goooood salad stuff for the week

bake a treat for brett - peanut butter cookies :) :) :)
brett makes stock like this
do this quick little routine of seeing if there’s any leftovers from the week I can freeze + throw any lurking produce into these containers to make smoothie cups
