sunday:
dinner:
grill and chill, explained in this ig post about our latest dinner themes
it’s so hot, so brett will roast a chicken like this this week
i’ll make a big vat of honey mustard sauce, some air fryer sweet potatoes, the components for a houston’s-style house salad, some air fryer chicken sausage, roasted veggies, etc. and we can do what speaks to our heart with it all.
like this air fryer chicken and veggies with rice meal. or sausage and veggie bowls with a mustard sauce (but use the honey mustard I linked above). or roasted chicken and sweet potatos dipped in honey mustard. or a good, loaded salad. or or or.
meal prep:
unload groceries for the week
make some sort of egg dish for the week
these cottage cheese egg muffins
or an adapted version of these hashbrown eggs muffins
or this hashbrown egg bake (can you tell we have a ton of frozen hashbrowns to use?)
thaw the french bread in our freezer
monday:
dinner:
friend dinner, explained in this ig post about our latest dinner themes
but if that falls through for whatever reason, we’ll do sandwiches with that honey mustard sauce.
meal prep:
assemble our veggie box
prep any fruit for easy snacking + easy dinner sides
make a big batch of our favorite ip oatmeal for the week
here’s why this serves us well all week long
tuesday:
dinner:
something with beans
because I meal prep here and there throughout the week, Tuesdays are my day I make my beloved Weekly Pot of Beans. so Tuesday Dinner is something with beans. a Taco-ish Tuesday, if you will.
let’s do build your own breakfast tacos with beans, eggs, bacon, potatoes, and that chorizo in the freezer
big bowl of fruit + big bowl of mashed avo
meal prep:
make Weekly Pot of Beans*
make a big batch of rice* with chicken/bone broth for added flavor
I love my beloved rice cooker for this
caramelize onions, or roast onions and peppers*
dice onions and jalapenos*
put cilantro* in water (here’s why)
* Brett works from home, and loves having components for bowls, quesadillas, tacos, etc to eat lunch at home. Taking half an hour to prep these things each week really helps our food budget…and elevates our at-home eating. Since I prep them on Tuesday, I plan something for dinner that use these components for a two birds one stone situation.
wednesday:
dinner:
leftovers
because it took me awhile to realize Leftover Night can be any night of the week. And because I have a standing weekly playdate with my BFFs Wednesdays after nap, cooking dinner wasn’t working. Wednesday Leftover Night it is!
I usually pack a dinner for KK - here’s my favorite containers and things for eating away from home!
meal prep:
pull the yogurt muffins out of our freezer
thursday:
dinner:
something with fish
because we realized an easy family favorite follows this formula: fish + grain + produce + bread. with a good sauce.
sunday grill and chill usually follows a similar formula, too.
let’s try this chipotle honey salmon bowl recipe. or this hot honey salmon. (but leave some salmon plain for Joe.)
leftover french bread
meal prep:
this quick little routine of seeing if there’s any leftovers from the week I can freeze
throw any lurking produce into these containers to make smoothie cups
friday:
dinner:
date night, date night!
some restaurant from our Local Places List
one of my monthly routines is to plan a Date Night or two
here’s 10 things I do every month for our marriage and household
saturday:
celebrating one of my favorite human’s birthday!
brett and kids will do snack dinner saturday + movie night
