rescheduled my birthday date with brett to this night!

one of my monthly routines is to plan a Date Night or two
but here are a few other things that help us prioritize Date Night
and let’s prep for the week:
my favorite pinto bean bowl (or here)
make a big batch of brown rice with chicken/bone broth for added flavor
I love my beloved rice cooker for this
make the weekly pot of beans
prep a bunch of fruit for the week
brett can grill some chicken like this for the week, too
monday: sandwiches
why we love a weekly sandwich night
grilled ham and cheese (or grilled cheese) on good bakery braed
the best tomato soup, pulled from the freezer

also set out: lettuce, tomato, mashed avocado, bacon, red onion, cheese cheese, bacon, ranch dressing, buffalo sauce, honey mustard dressing, caesar dressing, etc
like, Brett’s #1 favorite is to do a buffalo ranch style slider or wrap with blue cheese crumbles, but I almost always do a chicken caesar wrap with crushed croutons and parmesan cheese. or a grilled chicken slider with lettuce, tomato, and mayo. THE BEST.
with a big bowl of fruit. or sweet potato fries. or frozen French fries. or salad with ranch dressing. the heart wants what the heart wants.
tuesday: something easy
the costco tortellini in our freezer + pesto
(brett can add leftover grilled chicken from Sunday to his pasta)
our favorite easy green salad with this dressing
and/or veggie box + ranch dressing
big bowl of fruit
wednesday:
our weekly afternoon playdate with dear friends, so I pack a lunchbox for KK and Brett eats leftovers
thursday: something easy
friday:
pick up sauces (and margarita mix) from our favorite Mexican restaurant,
grab the chips, tostadas, and tortillas we always have on hand,
clear out the lurking cheese, crema, lettuce, tomatoes, onion, avo, etc from this week,
and use Sunday’s leftover beans/rice/chicken to make:
fajitas
nachos
or whatever speaks to our heart
the easiest, most celebratory way to end the week, while also cleaning out the fridge. and, let’s be real - I’ll ask Brett to make margs. happy fajita friday!
saturday: snack dinner saturday
visiting brett’s family, so we’ll either eat with them, or grab fast food on the way home
meal prep
prep smoothie cups in these containers
make our weekly batch of beloved oatmeal
prep any fruit for easy snacking + easy dinner sides (like wash + destem grapes)
also make veggie box
