Build Your Own Grain Bowl - plus plenty of leftovers to eat/repurpose all week.
grill chicken like this for general chicken/rice bowls (and for leftovers this week)
grill teriyaki chicken for brett’s favorite crunchy roll bowl
(or for leftover teriyaki chicken, rice, and broccoli bowls)
and grill steak fajitas for one of brett’s favorite meals
(or for quesadillas, steak and eggs, etc)
roast a variety of vegetables like this
make a big batch of grains with chicken/bone broth for added flavor
I love my beloved rice cooker for this
make the weekly pot of beans
prep goooood salad ingredients
like my favorite green salad or strawberry spinach quinoa salad
also make our beloved veggie box
make croutons with Dave’s Killer Bread (or this air fryer version)
prep (or pick up) gooooood salad dressings + sauces
at a minimum we like to have something creamy (like ranch) something vinaigrette-y (like a good balsamic), and something different (like from this list or in the aisles of Trader Joe’s)

monday: sandwiches
why we love a weekly sandwich night
chicken caesar wraps with leftover grilled chicken from Sunday
frozen sweet potato fries
big bowl of fruit
and/or a great big salad using Sunday’s prepped salad stuff
tuesday: something easy
steak and eggs and toast (or best breakfast potatoes ever)
use leftover steak fajitas from Sunday
or make a big pile of steak quesadillas + mashed avo
big bowl of fruit
wednesday: pizza/pasta/rice
our favorite instant pot creamy ziti

friday: fajita friday
pick up sauces (and margarita mix) from our favorite Mexican restaurant,
grab the chips, tostadas, and tortillas we always have on hand,
clear out the lurking cheese, crema, lettuce, tomatoes, onion, avo, etc from this week,
and use Sunday’s leftover meat/beans/rice to make:
fajitas
nachos
or whatever speaks to our heart
the easiest, most celebratory way to end the week, while also cleaning out the fridge. and, let’s be real - I’ll ask Brett to make margs. happy fajita friday!
saturday: smoothies and snack dinner saturday
I’ll clear out the fridge/freezer/pantry and make some sort of snack platter: produce, cheese, crackers, meats, dips, smoothies, sandwiches, chicken nuggets, Trader Joe frozen appetizers, whatever’s hanging around.

my favorite sunglasses - I have, like, eight pairs and I keep them everywhere. i am not in a season where I can handle expensive sunglasses :)
my gym membership is reactivated March 1st which means I can swim laps again!!! here’s why joining a gym with childcare serves us so well in this season and here’s what I pack in my gym bag/swim bag.
side note: joey will not be coming with me to the gym until he’s much older. kk loves the gym childcare, so she can totally come with me. but until joey’s older, i’ll go to the gym while he’s asleep (aka earlyyy morning), or at a time when he can hang with either brett or my parents.
according to my yearly tasks and expenses list, it’s time to take stock of our summer/swim supplies, and plan Easter baskets around that. :) weeeee!
