    • the cinnamon rolls lurking in our fridge

    • scrambled eggs

    • smoothies

    • big bowl of fruit

friday:

build your own pizza

  • tortillas, naan, or homemade pizza dough

    • marinara sauce, pesto

    • pepperoni, leftover grilled chicken

    • cheese

1/26 menu plan

sunday: 

monday:

  • brett gone for work

    • smoothies

    • eggs + english muffins

tuesday:

  • i have a late appointment, so let’s leave an easy, favorite dinner

    • instant pot orange pasta

      • I sub 3 c bone broth and 1 c half and half, then add riced cauliflower at the end

        • here’s why i add riced cauliflower to our pastas

      • here’s how I freeze leftover pasta for easy toddler meals

    • chicken meatballs from the freezer

    • big bowl of fruit + buttered english muffins

wednesday:

  • host playdate!

  • weekly batch of muffins or quick bread

  • cheese or yogurt + big bowl of fruit

  • brett eats leftovers

thursday:

  • fish taco po boys

friday:

  • tamales + avocado

1/19 menu plan

sunday: 

monday:

  • grilled chicken sliders or grilled chicken wraps

    • an array of sauces: chicken sauce, caesar, ranch, buffalo, mayo, etc

    • lettuce, avocado, tomato, onion, croutons, cheese

    • tortillas or rolls

tuesday:

  • burrito bowls

    • leftover grilled chicken

    • instant pot mexican rice or instant pot brown rice

    • pinto beans + “ refried” black beans

      • i usually do 2 c beans + 7 cup water + 2 TB bouillon + 1 tsp salt + 1 tsp onion powder + .5 tsp garlic powder in an Instant Pot for 30ish minutes (or a Slow Cooker for 8ish hours) - or I sub Pinto Bean Seasoning for the spices

        • I may remove some liquid and blend the cooked beans (using an immersion blender) with a little butter to make a “refried” situation

      • if I make it fresh, I always freeze half - so some weeks I’m just reheating frozen beans. but i’ve learned we love to have both pinto beans and “refried” black beans on hand each week

      • i love to freeze in these deli containers

    • weekly batch of queso

    • mashed avocado, corn, roasted sweet potato, sauteed peppers

    • shredded cheese, crema, creamy jalapeno

    • cilantro, onions, tomatoes, jalapeno

    • tortillas, tortilla chips

wednesday:

  • brett grills chicken

  • that frozen pasta in our freezer

  • roasted carrots or raw veggies + ranch

thursday:
