Tuesdays are my day I meal prep all this. so Tuesday Dinner is something with all that, and something with beans.
Quesadilla Night or Pinto Bean Bowls or Build Your Own Tostadas, or Burrito Bowls again. We can’t get enough lately.

here’s everything else I meal prep on Tuesdays and why - Tuesday is a very, very important cooking day and it takes care of us the entire rest of the week
let’s make “refried” black beans, mexican rice, creamy jalapeno, and queso (looooosely based on this bean recipe, this rice recipe, this creamy jalapeno recipe, and this queso recipe - I promise I’ll write out my recipes soon!)
wednesday:
brett roasts a chicken
my favorite au gratin potatoes with the potatoes in our pantry
big bowl of fruit
meal prep:
make some sort of muffins - let’s do these spinach muffins or yogurt muffins (double recipe, freeze for upcoming Airstream trip)
thursday:

leftovers

bake something for brett - snowball cookies, spritz cookies, peanut butter fudge, and/or regular fudge
freeze leftovers, make smoothie cups
friday:
teriyaki salmon with sriracha mayo with that salmon in our freezer

christmas with brett’s family!

bring leftover Christmas cookies - snowball cookies and spritz cookies, peanut butter fudge, and/or regular fudge
