fyi: the menu plan newsletter is being paused until I get some energy back - which may not be until after baby boy is born! (missed the pregnancy announcement? see the post here!)
meal plan
sunday:
dinner: grill and chill (or Brett cooks something from his favorite cookbook)
our annual trek to the Texas Monthly BBQ Festival - we’ll eat there!
for this reason Meal Prep will be very light this week, as you’ll notice in the Meal Prep section below!
monday: sandwiches
why we love a weekly sandwich night
our go-to easy, last-minute dinner: air fryer breaded chicken sandwiches
hoping to post this on Instagram, but know I keep these frozen patties from Costco in our freezer always for dinners like this. I heat them in the airfryer, I buy our favorite buns (Martin’s), and offer up onion, tomato, lettuce, etc. SO GOOD.
but know there’s a chance I might cut up my chicken patty to make my absolute favorite chicken caesar wrap with crushed croutons and parmesan cheese instead
big batch of comeback sauce (and either roasted broccoli and/or frozen fries)
or!
scrambled eggs
or miss b’s frozen biscuits
and various fixings like jam, cheese, bacon/sausage/ham, honey, butter, etc for a build your own biscuit situation - but Brett loves to build his own breakfast sandwich
big bowl of fruit
tuesday: something easy
balsamic glazed sheet pan gnocchi with sausage
one of our family favorites and the reason I keep TJ’s sweet potato gnocchi and TJ’s sausage in the freezer!
big bowl of fruit
wednesday: pizza, pasta, or rice
double or triple recipe and freeze in pans - for more details on how I do this see post on what I’m freezing for postpartum here
but know i saute the veggies first because I need my veggies softtttt
big bowl of whatever fruit I prepped Sunday
thursday: something easy
my favorite build your own pinto bean bowl
my slow cooker pinto beans, omit sausage
brown rice, mashed avocado, shredded cheese, etc
big bowl of fruit
friday: leftovers or takeout
saturday: snack dinner saturday or dinner with loved ones
meal prep
i usually do a little meal prep on Sundays as a part of our Grill and Chill, but I may instead do a bit here and there throughout the week. below is the list of what I hope to meal prep this week - it may not all happen, and that's okay! even 5 minutes of prep is super beneficial.
prep some sort of dessert for the week:
see here why this is our new favorite thing for our marriage.
the cookies I never got around to making the last two weeks:
one of my favorite cookies - make a double batch, freeze leftovers for postpartum
oatmeal chocolate chips cookies and/or my favorite oatmeal cookies
double recipe and freeze for postpartum

make veggie box, prep produce (like wash + destem grapes)
make a double batch of some sort of muffin/pancake/waffle/bar, if time/energy
make our favorite yogurt muffins, freeze half for postpartum
make some sort of egg dish, if time/energy
these potato egg muffin cups (omit bacon out of personal preference)
or a batch of instant pot hardboiled eggs
make some yogurt parfaits, if needed - post coming soon!
let’s prep smoothie cups in these containers, if needed
make our weekly batch of beloved oatmeal
favorite things
my weekly routine of Towel Tuesday - enjoy the mini house tour in this reel!
the one easy thing I’ve been meal prepping lately that’s been serving us well alllll week long
bought KK a stack of coloring books, sticker books, and Christmas-y play dough kits - for when I’m veryyyy slow in the coming weeks and for the postpartum (and cold/rainy) days to come
got a magnetic lint holder bin for my dryer and I’m not ashamed to say how much I appreciate it
finishing up our Christmas Gifts of 2022 this month so that everything’s done before Baby Boy
