meal prep some easy meals for the week: prepping more than usual since my in-laws are here to watch the kids and I leave for a girls’ weekend next weekend!

rice or roasted potatoes
pita chips (like Pinch of Yum shared in her email)
prep some things to help breakfast:
a bunch of diy smoothie packs
kodiak high protein sheet pan pancakes, add wild blueberries
double batch of buttermilk banana bread
my favorite egg bake with cottage cheese and peppers
+ make a second pan but sub roasted broccoli??
or make high protein veggie quiche
no bake peanut butter oat cups or protein brownie bites or cookie dough protein balls
monday:
big ol salad with air fryer chicken and shredded cheese
big bowl of fruit + toasted sourdough bread or english muffins
prep a veggie soup for me to eat this week for lunches
this one is my favorite but I sub bone broth, omit bacon, and halve the cheese
tuesday:
bean bowls
pinto beans + “ refried” black beans, freeze half
rice + mashed avocado + shredded cheese
corn, tomatoes, peppers, etc
wednesday:
easy dinner
big ol salad
thursday:
double batch of muffins: blueberry chia muffins + mixed berry muffins, prepping more than usual to prep for a weekend away!
