dinner: grill and chill
brett grills chicken for tonight’s dinner + monday’s dinner + tuesday’s dinner + lunch leftovers
burrito bowls with grilled chicken
mexican rice (I omit the oil and make this in my rice cooker)
pico, queso*, salsa, guac, onion, cheese, etc
monday: sandwich night (+ soup/salad, if we're feeling it)
why we love a weekly sandwich night
build your own wraps - probably brett’s favorite leftovers EVER
use grilled chicken from sunday
set out tortillas, grilled chicken, lettuce, tomato, red onion, shredded cheese, ranch dressing, caesar dressing, honey mustard dressing, etc
(we like to set out crushed croutons, too)
inspiration: chicken caesar wraps (one of our go-to meals), my favorite ranch wraps, honey mustard chicken wraps
perfect oven roasted broccoli + comeback sauce (or one of the above dressings)
and/or frozen french fries + big bowl of fruit
tuesday: taco-ish tuesday
freeze half, like how I mention in this freezer cooking post
or chicken quesadillas with sunday’s leftover chicken
or cheese quesadillas.
or bean and cheese quesadillas with sunday’s bean leftovers.
a big bowl of mashed avocado + a big bowl of fruit
wednesday: pizza, pasta, or rice
amazing instant pot creamy baked ziti
brett can add grilled chicken to his if he wants
steamed broccoli (+ caesar dressing to dip)
bagged caesar salad and/or make ahead garlic bread
thursday: fish or some sort of meat
frozen sweet potato fries + fruit
leftover raw vegetables from lunches + ranch dressing
friday: takeout or leftovers
saturday: snack dinner saturday or dinner with loved ones

currently meal prepping
i usually do a little meal prep on Sundays as a part of our Grill and Chill, but I may instead do a bit here and there throughout the week. (you’ll notice I allow space in my daily rhythm for potential meal prep.)
below is the list of what I hope to meal prep this week - it may not all happen, and that's okay! even 5 minutes of prep is super beneficial.

*yes, I’ve been known to make scrambled eggs ahead of time for the week. Project Meal Prep taught me how: “For [make-ahead scrambled eggs], it’s best to just slightly undercook your eggs. Maybe 30 seconds away from when you would actually want to eat them. You’re going to have to reheat everything and you don’t want hard overcooked eggs! They’ll cook a little more in the microwave during reheating.”

those that follow my Instagram stories know that this week I’ve been reflecting on some small changes I need in this season of ours - one of which is more audiobooks. so we joined another nearby library (for more access on my libby account - yay!!!) and I signed up again for audible again.
gosh, I love reevaluating what is (and isn’t!) working for us. routines and rhythms are meant to change as our needs change - and that’s okay! it’s all fluid.

currently streamlining
our new daily rhythm. like i mentioned in stories this week, kk is officially a tiny, active, curious human. and our daily rhythm needs to be tweaked to better serve her (and me!). nothing huge - the majority of our daily rhythm still works right now. but, for example, i’d like to start doing some potential outside time after her nap, but before dinner. which means I need to reevaluate dinner options for us: do I want to prep more during Sunday meal prep? do i want to prep dinner earlier in the day? do i want to rely more on slow cooker/IP/easy meals? do I want to bring back more freezer cooking? all of the above?
pinpointing what we need in this current season is so empowering and exciting. i’m changing and controlling what we can, while completely enjoying (and accepting) the rest. because…toddlers. :)

our warm weather/summer/pool/beach essentials - now that we have a gym membership with indoor pools, these things have been especially helpful!
currently working on
brainstorming Easter baskets - our Easter baskets follow a formula to get us ready/excited for summer, so some thought goes into what each basket needs. it’s SO much fun and we’re appreciative of these baskets all summer long. and both Brett and I get baskets too - because we especially deserve swim gear we feel good in.
